San Sebastián's food scene is the most concentrated in Europe — three-Michelin-star restaurants (Arzak, Mugaritz, Akelarre) within 15 kilometres of a city of 186,000 people, alongside dozens of pintxo bars where the distinction between haute cuisine and bar snack has been deliberately blurred. Juan Mari Arzak pioneered New Basque Cuisine in the 1970s, transforming traditional Basque cooking with modern techniques while maintaining the respect for local ingredients that defines the regional food identity.
